Like barbecue sauce, the dry rub you use for your grilled beef can make it as easy or as full of flavour as you would like it to be. Have a rest from the typical salt and pepper and go for something bigger and bolder – try these simple yet tasty homemade BBQ dry rubs at your next grilling session!

1/2 cup brown sugar
1/2 cup white sugar
1/3 cup sea salt
3 tablespoons red chile powder
2 tablespoons ancho chile powder
2 tbsp garlic powder
2 tbsp onion powder
2 tbsp ground black pepper
2 tablespoons Hungarian paprika
1 tbsp ground allspice
1 tablespoon ground cumin
1 tablespoon ground nutmeg
1 tbsp dried rosemary
1 tbsp dried thyme
1 teaspoon cayenne pepper
With a wooden spoon, stir until all ingredients are well-combined. Rub mixture generously onto two slabs of baby back ribs.

The Rosemary Rub

Ideal for chicken, pork or even vegetables

What you need:

8 cloves garlic, diced
1/3 cup olive oil
3 tbsp chopped fresh rosemary
1 tbsp dried rosemary
1 tbsp kosher salt
1 tbsp ground black pepper
Blend garlic, fresh rosemary, dried rosemary, kosher salt and ground black pepper in a bowl. Gradually stir in olive oil. Mixture should form a thick paste. Brush rub desired vegetables or meat. Cover and simmer for at least 4 hours. Grill vegetables or meat, brushing more of this rub while cooking.

What you need:

1/2 cup packed brown sugar
2 1/2 tablespoons chilli seasoning mix
2 tablespoons ranch dressing mix
1 teaspoon steak seasoning
1 tsp garlic salt
1 tsp onion salt
1/2 teaspoon ground black pepper
Mix together thoroughly the brown sugar, seasoning mixes, steak seasoning, garlic salt, onion salt and ground black pepper in a bowl. The resulting rub ought to be smooth and pliable. Rub the mixture liberally on meat and allow to sit at room temperature for at least 15 minutes prior to cooking.
